Friday morning, blue skies, the crisp air after the midnight rain… mmmm the day was all good and I was going to keep it so. Jumped on my computer, picked my soundtrack for the day… ‘Wonderful Life’ by Loius Armstrong… absolutely love his crooning voice!
Next step…I picked up the phone to call “The Boyfriend”… “Hi this is M.S, please leave your name and number after the beep” Darn it! He was still sleeping and I had enough energy to start up a rocket… I wasn’t going to let it waste… I needed to be out, socialize, have some great breakfast in the sun and I obviously needed a partner in crime… who was still in bed sadly
I wanted some sunshine and I wanted some dancing and I knew just how to get it…. so i decided to drive over to his place; said goodbye to dear old Louis Armstrong, grabbed a couple ramekins, my camera (i knew i wanted to do a little photography), a suitable placemat; quick stop at spinneys, picked up some basil, some cherry toms and a few quail eggs (there was a dual purpose for these… the shells were going to encase some yummy easter treats). I creeped on in and the house was silent… I was in luck! I wanted to surprise him… so rushed off into the kitchen, peeked into his fridge and found some mushrooms and of course beyond doubt… I knew he would have Bacon.
I got busy.. chopped up some onions, halved my cherry toms and julienned the bacon into thin slivers. Turned his stove on and sizzle sizzle sizzle… the bacon was smelling delicious! I quickly lined up the ramekins turned over to get the oven on and…. “insert dramatic da da da“… he just moved in and he hadn’t got the gas sorted.. and it was a gas oven
Oh no! I was almost done and I didn’t know how to complete my “bribe in a ramekin”. Think! think fast… looked around.. microwave! “Well hello there microwave… ” Yup the microwave was looking handsomer than usual at that point… ironically an unconventional- conventional technique was going to be my savior. Plopped my quail eggs in and voila.. it worked! Properly cooked and I was graced with a bubbling breakfast ramekin. Looked at the time and I only spent 18 minutes to be precise; ran up and “Good Morning Babe!… Look what I made…ok time to get up, lets go”
Did it work? Oh yes it did… I mean just look at this dish, it makes for a perfect bribe. I got my perfect sunny Friday!
Baked Eggs

Ingredients
- 6 Quail Eggs (add more eggs if you feel you will need more)
- 4 Slices of Bacon (Finely Chopped)
- A handful of mushrooms (chopped)
- 1 Onion (Finely Chopped)
- 6 Cherry Tomatoes
- A handful of Basil Leaves
- 4 tablespoons Cooking cream
- Sprinkle of Grated Parmesan
Directions
| Chop the onions and mushrooms and fry them up with the Bacon till it is cooked. | |
| Once the bacon, mushroom and onion mixture is cooked, line each of the ramekin with it. | |
| Scatter 3-4 halves of the cherry toms in each ramekin along with a few Basil leaves | |
| sprinkle some parmesan and half a tablespoon on cream into each of them | |
| Plop over the eggs in the ramekins, covering it with a tablespoon of the remaining cream. | |
| Cookin in the microwave for about 3-4 minutes until u see a few bubbles escaping the cream. | |
| Serve with some basil and crushed pepper Salt is not necessary, the bacon would handsomely provide that. | |

Lovely idea to use quail eggs, they have so much more flavoure and nutrients. Perfect for a nice boost in the morning.
