Char Grilled Sardines with the simplest Salsa ever

Ever since I made a conscious decision to move towards healthy eating, fish has been a staple in most our meals. Sardines are one of those fish that have an intense flavour packed along with robust nutritional value. I have been reminiscing my visits to beautiful Portugal where every menu and table had a plate of sardines and its potent bouquet to draw you in. Some of the best Sardines I have had are simply grilled with a light salsa to go with it. In Goa, people normally prefer to make a delicate sardine curry for the staple rice and curry meals. These grilled sardines are not only easy to muster up but they have a lovely smoky flavor that brings that earthiness to the back of your tongue with every bite. The flesh falls of the bone and the thin tender skin crisps up enough to give you a soft crunch. With my visit to Portugal in mind, I prepared a simple tomato and red bell pepper salsa, which went perfectly with these lovely sardines, simply cleaned and seasoned with nothing more than salt, pepper and a drizzle of olive oil.
